Flank Steak 

2-3 lb flank steak

1/3 c olive oil

5 cloves garlic

2 Tbsp red wine vinegar

1/3 cup coconut amigos (or soy sauce or tamari)

1/4 cup honey

1/2 teaspoon pepper

Blend all ingredients until smooth, marinate steak overnight

 

Roasted Beet/Radish Salad

2 Containers butter lettuce (or lettuce of choice)

3 Roasted beets, sliced

1/2 watermelon radish, thinly sliced

Segments of 2 oranges

Fresh herbs

 

Lemon Tarragon dressing

Zest of half a lemon

1/4 cup tarragon

1/4 tsp salt

3 tbsp apple cider vinegar

1 clove garlic

1/3 cup avocado oil (or more if you want the dressing less tangy)

1 tbsp honey

Use an immersion blender to combine all ingredients!
