Rajeev Ram + his wife dish out healthy recipes to kickstart our 2021 goals and keep us on our wellness path during a #WhatsInUrKitchen Livestream @TasteofTennis.
Broccoli florets sliced fine and thin from about 1.5 lbs of stalks
½ cup of sliced almonds toasted (toasting is optional)
½ cup of red onion chopped
3 dates chopped(you can sub cranberries or tart cherries)
1 Tbsp honey
2 Tbsp apple cider vinegar
1 clove garlic minced
1/3 cup olive oil
4 tsp sea salt
1 Tbsp Dijon mustard
Mix the ingredients of the salad first. Whisk up all the ingredients in the dressing and pour over the salad and toss to combine. Let it sit for at least 20 minutes or longer to let the dressing set in for full flavor.
Cashew Nut Milk
1 cup of raw cashews
4-5 cups of water (if you like it thicker start with four)
2 dates pitted (can sub maple syrup)
pinch of sea salt
dash of cinnamon (optional)
½ tsp of vanilla (optional)
In a high speed blender, blend together cashews and water and dates for 1.5 minutes. After that is blended add in a pinch of pink salt, vanilla and cinnamon. Adjust according to taste- add more dates, water or cinnamon if you need.
