*Cauliflower squid ink purée recipe

1/2 Head if Cauliflower
Milk or water to cover
Satchet:
Thyme
1 Tbsp squid ink
1 Tbsp Peppercorn
1 bay leaf

Season with sea salt and allow to simmer until cauliflower is mushy. Add a tablespoon of Squid and place contents in blender. Blend until smooth. Add a knob of butter for a silky texture. Pass through Chinois or fine strainer for better results.
