Beyond Meat sausage patty vegetable potato hash
12 beyond meat breakfast sausage patties
½ c onion, diced
½ c red or green pepper, diced
½ c zucchini, diced
2 potatoes, peeled and grated
1 c broccoli, cut & blanched
2 tsp fresh thyme, chopped
2 tsp fresh basil
salt & pepper
1 Tb plus ¼ c olive oil
Heat a large cast iron pan (sauté pan) and add 1 Tb oil. Add the sausage patties, cook and chop up into smaller pieces with a spoon.
Add the onions, peppers & zucchini. Season with salt & pepper. Cook 5 minutes. Add the broccoli, thyme & basil. Cook an additional 2 minutes. Remove from the pan. Add ¼ c olive oil to the same pan and heat, then add the potatoes and season with salt & pepper. Cook for about 10 minutes (you want the potato to cook through and become crispy.) Add the sausage vegetable mix back to potatoes.
Taste for seasoning one last time and serve.
